Take-out Tuesday, Iron Bowl Tears

I had planned to share an appetizer with you today called Tiger Meltdown Dip

On Saturday the table was set for the most important game of the year, the Iron Bowl

In the Man Cave, the pool table was turned into a game day buffet

We were ready for the big game,

and friends and family were coming over

The Iron Bowl is possibly the most heated rivalry in football, 2 teams from the same state, battling for a year’s worth of bragging rights, and this year, a third consecutive National Championship for Alabama was on the line

Football is a religion in this state, and every fan has their creed

And you better wear your colors and show your spirit proudly!

We had a little orange and blue for the few Auburn guests attending, you know at the far end of the table…

We tried to keep things fair and balanced [sort of]  serving “War Eagle Wings” and “Champion Chicken” [BBQ chicken wings]

There were “Tiger Tail Bites” [grilled smoked sausage]

and “Bama Bites”   [Chick Fil-a nuggets]

The media said Alabama would win by more points than predicted~

But Alabama fans know, that all logic goes out the window at the Iron Bowl, and anything can happen

Like Alabama loosing Saturday to their arch rival, Auburn….against the odds…

Auburn won the game with a missed field goal run back with 1 second on the clock, creating the most unbelievable win in the history of football…even any sports event ever….or so many are saying…

Sigh…and just like that, the Tiger Meltdown Dip I mentionedwell, it turned right into Iron Bowl Tears…

It is going to be a long 12 months before we have a chance to reclaim those bragging rights!

Here’s the recipe:

IRON BOWL TEARS aka ENCHILADA DIP for a printable version click here

1 lb ground beef

1 pkg taco seasoning

1 medium onion, chopped

1 can enchilada sauce

1 tub queso [Costco]*

*or 16 oz Velveeta cheese and 1 can Rotel tomatoes and green chilies

Prepare ground beef as directed for tacos.  Add onion, enchilada sauce and queso.  Cook and stir over medium low heat until cheese melts and everything is combined.  Transfer dip to a casserole or baking dish.  Dip can be refrigerated at this point for several hours or overnight.  Bake at 350 for 20-30 minutes or until hot and bubbly.  Serve with  sturdy  scoop like chips.

Makes enough for 10-12 people as an appetizer

This is a fast and hearty snack to enjoy without any holiday stress!
